“過橋米線”是云南滇南地區特有的食品，已有一百多年歷史，五十多年前傳至昆明。過橋米線由四部分組成:一是湯料覆蓋，有一層滾油；二是佐料；三是主料（為各種肉片）及輔料；四是主食，即用水略燙過的米線。鵝油封面，湯汁滾燙，但不冒熱氣。
